INJA marks the debut venture of Dubai-based Atelier House Hospitality in India, in collaboration with Mr. Manav Thadani, Founder & Chairman of Hotelivate. It is potentially the world’s first restaurant to seamlessly blend Indian and Japanese cuisines. The concept was envisioned by Chef Partner Adwait Anantwar and brought to life with Ms. Panchali Mahendra, CEO of Atelier House Hospitality.
Merging these distinct culinary traditions was a challenge, as Japanese cuisine is delicate and technique-driven, while Indian cuisine is rich, bold, and complex. Through extensive research and experimentation, INJA has achieved a harmonious balance of flavors where both cuisines enhance one another.
The restaurant’s design reflects this fusion, integrating clean wooden surfaces, natural stone, and bonsai from Japanese aesthetics with Mughal trinkets, peacock-colored fabrics, and lime-wash materials representing Indian heritage. The space feels subtly vibrant, fluid, and perfectly balanced.
Notable design elements include Itajime Shibori in Indian silk, copper-toned ceilings, malt cabinets, and floating artifact shelves, creating a visually captivating and immersive dining experience.
